I'll point out that any Games Diner content as an e23 product isn't going to be super-long, so it wouldn't be too much hassle to print out and staple – but, yeah, that's not the same as a professionally-printed book with content on both sides of the page.
Well, as for the prospects of that: I can't print and sell any content related to copyrighted material without the rights owners' permission, so that leaves e23 or any other SJG-sanctioned as the only channel for all the GURPS-related stuff.
For any wholly original stuff in the theoretical pipeline, though, I'll take your vote as a reminder to consider physical publishing options.
